Tandoori Friday & some firsts

Shocker of all shockers…I actually had work today, I know, I know, you all forgot I even HAD a job because I’ve had so many consecutive days off…

Naturally I packed all my goodies the night before in my re-re-recycled containers (once a hippie, always a hippie).

But wait, let’s rewind to the day before (aka prepping).

Since we have been in our brand new apartment with it’s brand new kitchen appliances for over a week, I felt the time had come to pop our oven’s cherry.  Long overdue.

Plus, I was feeling creative…and we all know what that leads to…

experimentation!

The Tandoori mix was the star of the show (the rest of the ingredients were just there as supporting cast members).  Still, I was excited because I have been craving Indian food forEVER!!

Even MORE exciting (as if that were possible) this was my first time cooking with kale.  Now, let me just say, I’ve been eyeing this weird, overly crisp lettuce stuff for some time – and the rest of you bloggies out there do some pretty badass stuff with it, so to say I was nervous would be a complete and utter understatement. 

Other veggies included in this trial meal were carrots, shrooms, zucchs, squash, brocc, cauliflower, snow peas, bell pepps, tomatoes, and only god knows what else.

My basic plan of attack was throw everything in a pot.  Yeah, super complex, I know. 

As it began to cook, the most amazing aroma began to fill the apartment…OMG, I could hardly hold back my excitement. 

Once the veggies were limp, I added in some cubed TOFU

After I let in slow cook for a while, I turned the stove off and let it cool, then ladled it into the tupperware I brought to work for today’s lunch.

Doesn’t it look dreamy?  Well, it WAS!!!

What a success!  The kale was great – it was the perfect consistency, not to crisp, but not too limp.  And the Tandoori flavor was spicy with a little kick, but not too much.  The veggies were a bit mushy, but at least it absorbed all the flavor nicely, as did the tofu.  Extra firm tofu is the way to go. 

I have a few more servings still, too  :)  My only regret was that I didn’t have some rice or bread (or naan) to soak up the extra juice.  I think I’ll make some quinoa next time. 

The rest of the days eats were the same old, same old: Odwalla bar, apple, orange, dried fruit mix (carob raisins, dates, dried pineapple), and lots and lots of coffee

Even though my lunch technically satisfied the salad challenge requirements, I decided to go old school (raw lettuce) with my dinner salad.  But I still wanted to be creative with the toppings…

…which is where yesterday’s oven de-virgin-izing came in use.  Beloved BN squash, sliced and salted and left to do it’s thing.  Most of the squash went straight from the pan to my mouth, but the few slices that managed to survive went into the salad…along with chickpeas, cherry tomatoes, sprouts, HALF an avocado, chopped carrots and celery, all on a bed of spinach.

WOW.  The combo of avocado and chickpeas will never get old.  It’s just that good.

I’m pretty proud of myself for conquering all my firsts today.  The oven, the kale, the Indian food…and the new bowl, too.

where the veggies at?

I realized over the last few days my meals have been really lacking in the green department! Hmmm...looks like I'll have to get on that. Maybe later. For now, I need warmth. I woke up because I was shivering, so it looks like I will be getting the down blanket out of the closet for the rest of the winter...it's f-ing COLD.

At least I finally got a day off work so I could sleep in. I def drank my coffee in bed. My slippers are also on their very last legs (no pun intended), so I rocked these fleece socks with rubber tread on the bottom. Maybe I'll get some new slippers for x-mas??

Today was the first day it actually hit me - how close to the holidays it is, it's nearly Christmas!!! I reeeeeeally wish I could be home now! I'm alone here in NYC since Kyle went home already (sad). I'm pretty jealous of all the people who have jobs that actually have breaks over the holidays...maybe I'll go back to school again, just so I can get a break. I have to work on the 24th, 25th AND 26th. Boo!

Okay, enough whining. I had a pretty not normal breakfast. It was more like a snack with my coffee(s).

I craved salty and sweet, so I mixed together raisins and soy nuts. PERfect :)

A while later, I decided to make a real breakfast - although it was more of a lunch since it was past noon at this point. Def still in my PJs btw!

This shiz is divine.

Beyond explicable. No words can describe how great this chewy carb-a-licious muffin is!

Mmmm...warm and yummy in my tummy.

I followed up with a nice steamy mug of tea. I am obsessed with this green tea. I am obsessed with all things pomegranate lately, too.

I was trying to get my energy up for the gym, so I had a plate of medjool dates.

At the gym I was hyper aware that this was both my first workout since 3 days, AND my last workout for the next 3 days. Oy ve! So much pressure to get in a good sesh and with such horrible weather conditions outside. I just wanted to stay wrapped in my blankie. But, I'm a good gym rat, and so I layered on clothes like I was heading out to the polar ice caps, and got my ass to the gym (step one). I started on the elliptical for 30 minutes, and the new Lady GaGa cd was keeping me pumped up, so I switched to the tread mill for another 30 mins. After that, I was still going strong so I decided to just finish up my Self mag on the elliptical, but next thing I know another 30 mins has gone by, and I wasn't even fatigued! I finished off the cardio with a 5 minute walk on the tread mill, and then headed over to the mat for stretching, abs and arms.
Wow. That was a serious freakin' gym sesh!

This can't be healthy! I'm ashamed that I bought it, but it was a pomegranate flava!

I also got some vegan parm for my dindin.

Spag squash that I thawed (I made a mother load before so I still have the rest in the freezer).

Add in the sauce and parm...

And that's dinner.

(haha, yeah right)
Here's round 2. On this serving, I added the rest of the Italian seasoned tofu from last week.

I'm cleaning out the fridge! Leftovers much?

So yummy.
I still wanted more greens though, so I steamed some yellow squash and zucch, that I also topped off with tomato sauce and vegan parm.

And yet, after laundry and packing and doing other crap around the apt, I was STILL hungry. So I went for leftover dish #2...this was the curry tofu dish from last week (I ate all the tofu first, and the rest was only so-so).

Dessert was dried edamame. Salt, salt, salt. I heart salt.

Ok, work again tomorrow :( = bed time.

ready to chew my arm off

1) I was starving ALL freakin' day long, why so hungry?? No idea.

2) My patients were making me craaaaaaaaazy!!


3) My subway train was stuck at the 50th street station (no express trains on weekends - BOO!!) because my car's door wouldn't close properly. It added an extra 30 minutes to my already horrible commute. Sweet. I was about to pass out because my stomach was eating itself.

ANYways...I was starving by 10 and I was out of odwalla bars (sad), so I stole some food from the extra hospital breakfast trays (even more sad). Not so hot. And yes, that is a Splenda (shh, don't tell).


Total is kinda blah without something sweet (good thing Lactaid is also pretty darn sugary). I also added in some raisins from my pre-packed lunch.

Mmmm.

Here's my lunch. Same old same old.

It stopped snowing by the afternoon, so I braved the cold and darted across the street for a Bruno's soup. I honestly, can't for the life of me, remember what kind of soup it was!! I always order the vegan option, so I guess I kinda zoned out when I got to the counter...either way, it was delish as Bruno's always is!!

Heart it.

Plus my yummy smart deli "turkey" sando (this time with an extra somethin' somethin'). Yup, I added hummus to break out of the mold. Watch out.


By the time I got off work, I was about to eat the first thing I could get my hands on...this is dangerous overeating/binging territory for me. So, I tried to go to Whole Foods with a semi-game plan and be mindful while shopping.

No such luck. The second my eyes landed on this, I knew it was all over.

WW tandoori naan! Could there be a more perfect carb? (Answer=no!)

I started slow, but let's be honest, there is no way I wasn't going to finish the whole thing. I was starving after all...below is 1/3 of a piece of naan.

(So multiply that by 12 and there's my carbo loading for the night) Yep, I finished the rest of the hummus AND all 4 massive naan pieces.

Last bite :(


And that was just the appetizer.

As if that weren't enough...I got a huge container full of 4 different types of tofu (baked plain, sweet and sour, bbq, and lemon pepper). I was f-u-l-l after a few bites, but for some reason I forged ahead.

Don't worry, I only managed to get through a quarter of the box (which is way deeper than it looks btw) before I called it quits.

Two cups of tea. So full. Bed time.

sCURRYumptious

Last night I definitely woke up 6 times to pee...it might have something to do with my bedtime fluid loading (I'm really annoyed by this cold).

Right before I went to bed I had a cup of tea and a glass of pink lemonade flavored Emergen-C. This pink packet was in my "Pilates for Pink" gift bag (yes, from October) and I randomly came across it yesterday, talk about good timing!

Cut to today...
I feel MUCH better. I woke up at 9 (boo) and was STARVING!! Weird. Anyways, I decided to make the ratio of my morning mug 10% coffee and 90% soymilk - since I was so hungry. Then I went to make the coffee and discovered we had enough grounds for approx 1/16th a cup...WTF!?!...good thing I wasn't in need of caffeination! Looks like I need to make a run to Sbucks today.

While sipping my coffee flavored soymilk, I started breakfast.

Look what I found! Look what I found! Broccoli slaw!! (After last night's disappointing grocery store search I was scared I'd never find it again) so now I'm beyond freakin' excited, I'm going to try to make it last as long as possible (riiiight). But clearly I had to use it in my breakfast! I decided to make an egg scramble thingy.

I sauteed some brocc slaw and cherry tomatoes until they were wilty. Then poured in about a cup or so of egg substitute. If I ever went vegan for real, what would I do for eggs? Is there any vegan approved egg substitute? It's not like they are a staple in my diet, but I do like them, and they are healthy and a good source of protein.

A little more stirring until the eggs were done cooking...

I also made some toast topped with Chobani greek yog and Kyle's mom's strawberry/plum jam.

It was a perf start to the day and held me over for a while.
A few hours later I had a raspberry O'soy yogurt. Prob my least fave flavor, but still very good, and def better than any other soy yogurt. You can't tell but it was pouring rain outside :(

It was past noon at this point and I still wasn't hungry, but this stupid Milky Way bar was sitting there, so next thing you know...

Bad Elise! The good news is my patient supplied candy stash is finally exhausted. I had an organic gala apple after that, just because I felt like I had to counter my previous unhealthy food choice. I'm sure there's some type of logic in that argument, somewhere.

Gym time! I was pretty sore today from my past 2 days of hard core workouts. Since I took a month+ hiatus from exercise, I shouldn't really be surprised, but still...I promised myself that I would work out every day I don't work, and since I have work the rest of this week, I have to get my butt moving today.
Even though it was raining out, it was warm! I still wasn't willing to brave the weather and run outside, though. From the second I stepped on the elliptical, I really had no energy. Blah. I ended up doing only 45 mins, but at least I was on a super high level. I was sweating big time. After that I did some arm stuff and stretched forEVER.
I hit up Starbeezies on the way home to get some coffee. Christmas Blend (woohoo)!!

Totes excited to try out this flavor. Oh, I got a drink while I was there (obvi).

Iced coffee with soy milk :) I don't even feel guilty about this second caffeine dose (on a non-work day) since my AM coffee was like a tsp worth of caffeine.

Curry time!
For dinner, I was in an Indian mood. I decided to make a curry/masala tofu with a healthy twist (meaning lots of fresh veggies).

Red, yellow, and green peppers!

Indian masala tofu sauce/marinade ingreds:
tamari soy sauce
turmeric (ground)
onion powder
coriander
ground cumin seeds
celery seeds (normally I hate these, but I went with the recipe)
curry powder
anise seeds
cinnamon

I don't normally cut up the tofu before marinating, but I did this time. Baking tofu in sauce only seems to flavor the outside, and the inside is still white and untouched when I cut into it, so instead I steamed the tofu pieces while they were submerged in the marinade with water (healthier than oil). This SO worked.

See how well the flavor has penetrated all the pieces! Don't get me wrong, I still like baked tofu, but only when I do it plain without seasoning (so I can season it later when I put it in whatever dish).

Anyways, I combined the tofu, pepps, and Shirataki fettuccine noodles...and ta-da!

Tasty tasty. Need seconds, fo sho.

I will def make this one again. Vegan approved and it happens to be gluten free as well.
